- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 cups spinach or kale
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic, carrots, celery, and sauté for about 5 minutes until softened.
- Stir in diced chicken and cook until opaque; then pour in chicken broth and diced tomatoes. Bring to a simmer for 10 minutes.
- Add spinach or kale along with Italian seasoning; stir until greens wilt (about 3 minutes).
- Season with salt and pepper to taste and simmer for another 5 minutes.
- Serve hot, garnished with freshly grated Parmesan cheese if desired.
