- 1 cup plain breadcrumbs
- 2 large eggs
- 1 cup shredded sharp cheddar cheese
- ¾ cup ketchup (divided)
- 2 cups creamy mashed potatoes
- 2 tbsp fresh parsley (chopped)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine ground beef, breadcrumbs, eggs, shredded cheddar cheese, and half of the ketchup; mix gently.
- Shape the mixture into a loaf in the prepared baking dish; smooth out the top.
- Spread the remaining ketchup over the meatloaf.
- Bake for about 50 minutes until cooked through and golden brown.
- Let rest for 10 minutes before serving; garnish with chopped parsley.
