- 1.5 lbs baby potatoes, halved
- 14 oz smoked sausage, sliced
- 1 packet (1 oz) ranch seasoning mix
- 2 cups shredded sharp cheddar cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh chives, chopped
Instructions
- Preheat oven to 400°F (200°C) and grease a large baking dish with olive oil.
- Toss halved baby potatoes in the dish.
- Scatter sliced smoked sausage over the potatoes.
- Sprinkle ranch seasoning evenly and toss to coat.
- Bake for 25 minutes, then remove from oven and top with shredded cheese.
- Return to the oven for an additional 10 minutes until bubbly.
- Garnish with fresh chives before serving.
