Ingredients

  • 2 medium green plantains (about 400g)
  • 1 tsp salt (divided)
  • 2 tbsp olive oil or avocado oil
  • 1 cup water

Instructions

  1. Peel the plantains by cutting off the ends and slicing down the skin lengthwise.
  2. Cut the peeled plantains into 1-inch thick slices and soak in water with ½ tsp salt for 10 minutes.
  3. Preheat the air fryer to 375°F (190°C) and lightly spray the basket with cooking oil.
  4. Air fry the soaked plantain slices in a single layer for 8-10 minutes until slightly golden.
  5. Remove and gently mash each slice to about half an inch thick, sprinkling remaining salt over them while warm.
  6. Return mashed plantains to the air fryer in a single layer and cook for another 5-7 minutes until golden brown and crispy.
