- 4 medium bell peppers (red, yellow, or green)
- 1 lb lean ground beef or steak (ribeye or sirloin preferred)
- 1 medium sweet onion, diced
- 1 cup fresh mushrooms, sliced
- 1 cup provolone cheese, shredded
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat. Sauté onions and mushrooms until soft (about 5 minutes).
- Add ground beef or steak strips and garlic powder; cook until browned (7-10 minutes).
- Season with salt and pepper. Mix well.
- Stuff each pepper with the meat mixture; top with provolone cheese.
- Place in a baking dish and bake uncovered for 25-30 minutes until cheese is bubbly and golden.
