Instructions
- Prepare the vegetables: Wash and chop zucchini, onion, bell pepper, and mince garlic.
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; sauté until soft (3–4 minutes).
- Push veggies aside; add ground turkey to the skillet. Cook until browned (5–7 minutes).
- Stir in zucchini and garlic; cook until zucchini is tender but still crisp (4–5 minutes).
- Season with Italian seasoning, salt, and pepper; mix well.
- Serve hot over rice or enjoy as is.
