- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup cooked chicken (or 1 can beans)
- 1 cup bell peppers (chopped)
- 1 medium onion (chopped)
- 2 tsp taco seasoning
- Sour cream or guacamole (for serving)
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, sauté chopped onions and bell peppers until softened, about 5 minutes.
- On half of each tortilla, layer cheese, cooked chicken (or beans), sautéed veggies, and sprinkle taco seasoning generously.
- Fold each tortilla over the filling and place on a parchment-lined sheet pan.
- Bake for 15 minutes or until golden brown. Slice into wedges and serve with sour cream or guacamole.
