  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • Fresh herbs (parsley or cilantro), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season chicken breasts with salt, pepper, and half of the BBQ sauce.
  3. In a bowl, toss sweet potato cubes with olive oil, salt, and pepper until well-coated.
  4. Spread sweet potatoes on one side of the baking sheet; place chicken on the other.
  5. Bake for 25-30 minutes until sweet potatoes are tender and chicken reaches an internal temperature of 165°F (75°C).
  6. In the last few minutes of cooking, brush remaining BBQ sauce over the chicken.
  7. Remove from oven, slice chicken, and serve over sweet potatoes. Garnish with fresh herbs.
