Ingredients

  • 2 cups fresh cherries, pitted
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Wash and pit the cherries; slice in half if desired.
  3. In a bowl, mix cherries with 1/4 cup sugar and vanilla extract until coated.
  4. In another bowl, combine flour, oats, remaining sugar, baking powder, and salt. Cut in cold butter until crumbly.
  5. Press half the crumble mixture into the bottom of the prepared dish. Spread cherry filling evenly over it and top with remaining crumble.
  6. Bake for 35-40 minutes until golden brown on top and bubbly around edges.
  7. Allow to cool slightly before slicing into squares.
