- 1 tsp cumin
- 1 tsp salt

- 1 ripe avocado, sliced
- 2 medium tomatoes, sliced
- 1 cup lettuce or cabbage, chopped
- 1/4 cup spicy mayo (mix of mayo and sriracha)
- 4 torta buns or rolls
- 1/4 cup pickled jalapeños (optional)
- Fresh cilantro for garnish
- Extra lime wedges for serving
Instructions
- Marinate the chicken by mixing olive oil, lime juice, garlic powder, cumin, salt, and pepper in a bowl. Add chicken thighs and refrigerate for at least 30 minutes.
- Heat a grill or skillet over medium-high heat. Cook marinated chicken thighs for about 6–7 minutes on each side until golden brown and cooked through.
- While the chicken cooks, prepare toppings: slice avocado and tomatoes; chop lettuce or cabbage.
- For the spicy mayo, combine mayonnaise with sriracha in a small bowl; adjust spice level to taste.
- Toast torta buns if desired. Assemble sandwiches with lettuce/cabbage first, then layer chicken, tomato slices, avocado chunks, spicy mayo, cilantro sprigs, and jalapeños.
- Cut sandwiches in half before serving. Enjoy with chips or fries!
