Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, garlic powder, cumin, salt, and pepper in a bowl. Add chicken thighs and refrigerate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook marinated chicken thighs for about 6–7 minutes on each side until golden brown and cooked through.
  3. While the chicken cooks, prepare toppings: slice avocado and tomatoes; chop lettuce or cabbage.
  4. For the spicy mayo, combine mayonnaise with sriracha in a small bowl; adjust spice level to taste.
  5. Toast torta buns if desired. Assemble sandwiches with lettuce/cabbage first, then layer chicken, tomato slices, avocado chunks, spicy mayo, cilantro sprigs, and jalapeños.
