- 8 oz fettuccine or penne pasta
- 1 lb Italian sausage (spicy or mild)
- 1 cup sun-dried tomatoes in oil, chopped
- 4 cups baby spinach
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 1 medium sweet onion, diced
- 2 tbsp extra virgin olive oil
- Fresh basil (optional), for garnish
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Crumble in the Italian sausage and cook until browned (5-7 minutes).
- Add the diced onion and minced garlic; sauté until onions are translucent.
- Stir in the spinach until wilted (about 2 minutes).
- Pour in the heavy cream and simmer for 3-4 minutes until slightly thickened. Add sun-dried tomatoes.
- Combine cooked pasta with the sauce mixture in the skillet, stirring gently until well-coated.
- Mix in freshly grated Parmesan cheese until melted and creamy. Serve warm, garnished with additional cheese or fresh basil.
