- 1 lb ground beef (80/20)
- 1 cup green bell peppers, chopped
- 1 cup sweet onion, chopped
- 1 cup mushrooms, sliced
- 2 cups shredded provolone or mozzarella cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 3 large eggs
- ½ cup sour cream
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
- In a skillet over medium heat, add olive oil. Sauté onions and green bell peppers until soft and golden brown (about 5 minutes).
- Add ground beef to the skillet; cook until browned and crumbly (around 7 minutes).
- Stir in sliced mushrooms, garlic powder, and Italian seasoning; simmer for an additional 5 minutes.
- In a bowl, whisk together eggs and sour cream. Pour over the meat mixture; mix well.
- Transfer to the prepared baking dish and top with shredded cheese.
- Bake for 25-30 minutes until bubbly and golden. Let cool slightly before serving.
