- 4 boneless, skinless chicken breasts (1.5 lbs)
- 2 medium fresh zucchinis, sliced
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly grease a large baking dish with nonstick spray or olive oil.
- Season chicken breasts with salt, pepper, olive oil, garlic powder, and oregano.
- Place seasoned chicken in the baking dish and arrange sliced zucchini and cherry tomatoes around it.
- Bake for 25–30 minutes until chicken is cooked through (juices should run clear).
- In the last five minutes of baking, sprinkle crumbled feta cheese over the dish to melt slightly.
- Let cool for a few minutes before serving.
