Instructions
- Create the crust by combining crushed chocolate cookies and cocoa powder in a bowl. Stir in melted butter until crumbly, then press firmly into the bottom of a 9-inch pie pan.
- In another bowl, beat softened cream cheese until smooth. Gradually mix in sifted powdered sugar until fluffy—approximately 2 minutes.
- Add mint extract and green food coloring (if using), blending until well combined.
- Gently fold in whipped heavy cream to maintain an airy texture.
- Pour the filling into the prepared crust and smooth the top with a spatula. Refrigerate for at least 4 hours or overnight.
- Before serving, top with additional whipped cream and garnish with chocolate shavings or mint leaves.
