- 3–4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 8 oz fresh green beans, trimmed
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and coat a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper.
- In a bowl, toss halved potatoes with olive oil, minced garlic, dried thyme, salt, and pepper. Spread in the baking dish.
- Nestle seasoned chicken among the potatoes; drizzle with remaining olive oil and sprinkle smoked paprika on top.
- Scatter green beans over chicken and potatoes; season lightly with salt and pepper.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C). Toss halfway through for even cooking.
- Let rest for 5 minutes before serving.
