Instructions
- Preheat your oven to 350°F (175°C).
- Roll out the chilled pie crust into a 9-inch pie dish and prick the bottom with a fork.
- Bake the crust for about 15 minutes until lightly golden.
- In a mixing bowl, whisk together honey, heavy cream, eggs, lemon juice, and sea salt until smooth.
- Pour the filling into the baked crust and return to the oven for an additional 25-30 minutes until set but slightly jiggly in the center.
- Allow to cool completely at room temperature before slicing.
