- 2 lbs Russet or Yukon Gold potatoes, thinly sliced
- 3 large sweet onions, sliced
- 2 cups Gruyère or Swiss cheese, grated
- 1 cup heavy cream
- 4 tbsp butter
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt butter over medium heat. Add sliced onions and cook until golden brown, about 20 minutes.
- Combine heavy cream with salt, pepper, and thyme in a bowl.
- Grease a baking dish with butter. Layer half of the potatoes at the bottom, followed by half of the onions and half of the cream mixture. Repeat layers and finish with remaining cream.
- Top with grated cheese and cover with foil. Bake for 45 minutes; remove foil during the last 15 minutes to achieve a crispy top.
- Let rest for 10 minutes before serving.
