- 1 cup medium-ground cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup honey
- 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin tin.
- In a bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix honey, buttermilk, eggs, and melted butter until smooth.
- Gradually combine wet ingredients with dry ingredients; stir gently until just combined.
- If desired, fold in chopped green onions.
- Spoon batter into muffin tin and bake for 15-20 minutes until golden brown.
- Allow to cool slightly before serving warm.
