  • 1 lb boneless, skinless chicken breasts, diced
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 cup low-sodium chicken broth
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. In a skillet over medium heat, sauté onions and bell peppers until soft (about 5 minutes).
  3. Add chicken along with garlic, cumin, and smoked paprika. Cook until chicken is browned (7-8 minutes).
  4. In a large bowl, mix cooked spaghetti, chicken mixture, tomatoes, sour cream, broth, and half the cheese.
  5. Transfer to the baking dish. Top with remaining cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until golden brown.
