- 3 cups cooked spaghetti
- 1 lb boneless, skinless chicken breasts, diced
- 2 cups shredded sharp cheddar cheese
- 1 can (10 oz) diced tomatoes with green chilies
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 cup low-sodium chicken broth
- 1 cup sour cream
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- In a skillet over medium heat, sauté onions and bell peppers until soft (about 5 minutes).
- Add chicken along with garlic, cumin, and smoked paprika. Cook until chicken is browned (7-8 minutes).
- In a large bowl, mix cooked spaghetti, chicken mixture, tomatoes, sour cream, broth, and half the cheese.
- Transfer to the baking dish. Top with remaining cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until golden brown.
