- 1 lb ground beef (80/20)
- 4 slices bacon, chopped
- 1 cup breadcrumbs (plain or seasoned)
- 1 cup shredded cheddar cheese
- 1/2 cup bourbon BBQ sauce
- 4 soft sub rolls
Instructions
- Preheat a skillet over medium heat with a splash of oil.
- In a bowl, mix ground beef, chopped bacon, breadcrumbs, salt, and pepper until just combined.
- Roll mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
- Cook meatballs in the skillet for about 8 minutes until golden brown on all sides.
- Pour bourbon BBQ sauce over the meatballs and simmer for an additional 5 minutes.
- Slice open sub rolls and fill with several meatballs, topping generously with shredded cheese.
- Broil for 2-3 minutes until cheese is melted.
