- 1 large English cucumber
- 8 slices soft white or whole grain bread
- 4 tablespoons cream cheese or butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh dill or chives (optional)
Instructions
- Wash and dry the cucumber thoroughly.
- Slice the cucumber into thin rounds (about 1/8 inch thick).
- Spread cream cheese or butter evenly on one side of each slice of bread.
- Layer cucumber slices on one slice of bread, slightly overlapping them.
- Sprinkle lightly with salt and pepper.
- Place another slice of bread on top, spread side down, and press gently.
- Cut off crusts if desired, then slice sandwiches into quarters or triangles.
- Serve immediately on a platter.
