- 1 lb ground beef (80/20)
- 6 slices thick-cut bacon
- 2 cups sharp cheddar cheese, shredded
- 4 large eggs
- ½ cup heavy cream (or full-fat milk)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-carb vegetables (bell peppers or zucchini)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a large baking dish.
- In a skillet over medium heat, cook chopped bacon until crispy; add diced onions and garlic until softened. Set aside.
- In the same skillet, brown the ground beef, seasoning with salt and pepper.
- In a large bowl, whisk together eggs and heavy cream. Stir in cooked bacon, sautéed vegetables, ground beef, and half of the cheddar cheese.
- Transfer the mixture to the baking dish and top with remaining cheddar cheese.
- Bake for 30–35 minutes until golden brown and bubbly.
